Hotel Style Tiffen Sambar......

Ingredients :

  1. Split Yellow Moong dal - 1/2 cup
  2. Potato - 2
  3. Carrot - 1 
  4. Shallots / small onion - 10 - 15
  5. Tomato - 1 medium size
  6. Green chilly - 1
  7. Jaggery - 1 small piece
  8. Tamarind pulp  - 1/2 tbsp
  9. Salt to taste

To Dry Roast & Grind :

  1. Channa dal / Kadala paruppu - 2 tbsp
  2. Coriander seeds - 2 tbsp
  3. Red chilly 2 - 3
  4. Store this powder in air tight container 

To Temper :

  1. Oil - 1/2 tbsp
  2. Ghee - 1 tbsp
  3. Mustard seeds - 1/2 tsp
  4. Urad dal - 1/2 tsp
  5. Jeera / Cumin - 1 tsp
  6. Asafoetida / Hing - a pinch
  7. Few curry leaves

Method :

  1. In a pan, dry roast the coriander seeds, channa dal and red chilly in medium flame , till nice aroma comes.
  2. Let's cool down completely and make a fine powder and set aside.
  3. Dry roast the moong dal till nice aromo comes and cool down completely.
  4. Pressure cook the moong dal with enough water for 4- 5 whistles until is mushy.
  5. Smash it well with laddle, set aside.
  6. Heat oil in a kadai, add the onions, tomato and green chilly, saute it till raw smell goes.
  7. Then add the veggies with turmeric powder and cook for 3 - 5 mins in medium flame.
  8. Then transfer this to cooked dal with 1 cup of water and salt.
  9. Add 1 tbsp dry roast powder and tamarind pulp, mix it well.
  10. Then add jaggery, allow the sambar to boil thicken.
  11. Once its reach desired consistency, In a kadai, heat oil and ghee, add the mustard seeds once its splutter add urad dal, jeera, hing and curry leaves.
  12. Transfer this to sambar and mix it well.
  13. Finally add the coriander leaves and turn off the flame.
  14. Serve hot with Idly / Dosa.
