Bhuna Potato Roast - Bhuna Masala Potato Roast Recipe :

This delicious bhuna potato roast is easy to make which means it is perfect for curd rice. The thick, medium-hot, sauce made from a tasty blend of flavorings and vegetables perfectly coats with masala. If you want to increase the heat of this yummy curry simply add more chilies. You could also make a non - vegetarian version by replacing the potato with a selection of chicken, egg, etc.

Ingredients : 

  1. Boiled Potato - 4 OR Baby Potatoes 8 - 10
  2. Bhuna Masala - 1 1/2 tbsp
  3. Crushed Garlic - 5 - 7 cloves
  4. Jeera / Cumin Seeds - 1 tbsp
  5. Mustard seeds - 1/2 tsp
  6. Few curry leaves 
  7. Few coriander leaves
  8. Asafoetida / Hing - a pinch
  9. Salt to taste 
  10. Oil - 1 tbsp

Method :

  1. First clean and wash the potatoes.
  2. In a pressure cooker, cook the potatoes for 2 whistles with salt.
  3. Remove the potato from the cooker, let cool down completely.
  4. Peal the skin from the potatoes, set aside.
  5. Heat oil in a kadai, add mustard seeds once its splutter add cumin seeds, hing and curry leaves , saute it for few sec.
  6. Add the crushed garlic cloves, saute it till color change.
  7. Then add the boiled potatoes, mix it well for amin.
  8. Add the bhuna masala paste to the potato and saute it well for few mins.
  9. Finally add the chopped coriander leaves and turn off the flame.
  10. Serve with curd rice / rasam sadam.
