Andhra style Rasam powder - Charu Podi....

Ingredients:

For Dry Roast 

  1. Coriander seeds - 1 cup
  2. Fenugreek seeds - 1.25 tbsp
  3. Cumin seeds - 1 /2 cup

Roasted in Oil 

  1. Dry red chilies - 10 - 13 
  2. Curry leaves - 15 - 20 
  3. Asafoetida / Hing - 1/4 tsp

Roasted in Ghee

  1. Whole pepper corns - 1.5 tbsp

Method:

  1. In low medium flame, dry roast each of them separately until brown and nice aroma comes. Finally combine all dry roast ingredients, saute it for 1 min in low flame and remove it from the flame.
  2. Heat oil in a kadai, roast the red chilies until they are crisp and dark color. Make sure they don't turn brown.Then add the curry leaves and hing roast them until crisp. Remove and set aside on the plate.
  3. Now heat the ghee and roast the peppercorns until the nice aroma comes it took 2 - 3 mins. Remove and set aside.
  4. Let the whole mixture cool down completely.
  5. In a blender, put all the ingredients and make a semi fine powder.
  6. Cool and store in an airtight container.
