Ginger Chutney - இஞ்சி சட்னி Recipe:

Healthy and tasty ginger chutney...

Ginger Chutney - இஞ்சி சட்னி 
Cooking Time: 20 mins
Cuisine: South Indian

Ingredients:

  1. Ginger - 1/2 cup
  2. Red chilly - 5 - 6
  3. Urad dal - 1 tbsp
  4. Channa dal / Kadalai Paruppu - 1 tbsp
  5. Curry leaves - 2 spring
  6. Tamarind - 1 small piece 
  7. Jaggery - 1  small piece 
  8. Oil - 2 tsp 
  9. Salt to taste

To Temper:

  1. Oil - 2 tsp 
  2. Mustard seeds - 1/2 tsp
  3. Few curry leaves

Method:

  1. Wash the ginger well under running water devoid of any dirt particles.
  2. Peel off the skin and chop it roughly into pieces, set aside.
  3. Heat a oil in a pan add ginger and saute till nicely browned.
  4. Add urad dal, channa dal, curry leaves, red chilies and tamarind keep sauteing in low medium flame till it becomes golden brown and roasted.
  5. Let it cool down completely.
  6. In a blender, transfer all the ingredients add jaggery, salt and little water and grind it coarsely.
  7. Transfer to the bowl and start with tempering.
  8. Heat oil in a pan add mustard seeds,curry leaves and let it crackle.Transfer the tempering to the chutney.
  9. Serve with idly/dosa.
